15 minutes and you’re done! That’s what I love about this simple healthy recipe. The best part is you can get the rice cooking first and then mix up the other ingredients and cook them up while the rice is going.

Serves about 4


  • 1 cup jasmine rice
  • 1.5 cups water
  • 1 Tbsp extra virgin coconut oil
  • 6-8 cups frozen organic vegetables
  • 1 Tbsp maple syrup
  • 2 Tbsp organic tamari*
  • 1 Tbsp fresh peeled minced ginger
  • Raw cashews or sesame seeds for topping if you’d like

What is tamari? Tamari tastes a lot like soy sauce except without the wheat so I like to use organic tamari instead of soy sauce to avoid wheat when I can.
